Have you restarted your router since you disabled UPnP? If you have, then the changes you made were reset and UPnP is enabled again.
Maybe your electricity went out for a minute and that reset your router. Check the UPnP settings again.

Are you using wireless internet while playing? If yes, then don't do it anymore. Your connection will be more stable and your ping will be smaller when you connect with a wire.

Also try turning off firewall when you're playing and don't join servers with high pings.
