You cannot 'set' dogtags in BC2. That's a BF3 only feature.

But when I played the game on XBOX 360 (BF BC2), when i knifed people, they had different dog tags.

The only difference that is available is the color of dogtags (bronze, silver, gold) and that depens on your level.
